
- 2 cups Gluten Free Penne Pasta
- 1 can coconut cream
- 1 bunch green onions
- 1 tablespoon minced garlic
- 1 avocado
- 1 bunch asparagus
- 1/2 zucchini
- 1 Alaskan salmon fillet
- 2 tablespoons olive oil
- 2 tablespoons coconut oil
Directions:
Chop bunch of onions into small pieces and add to saute pan. Add 1 tablespoon minced garlic and 1 tablespoon coconut oil into same pan. Saute over medium heat for 3 minutes. Pour everything from saute pan into blender. Add 1 can coconut oil and 1 avocado. Blend mixture into thick sauce and place back into the saute pan. Warm pan on low heat on stove top to the side. Next, chop up asparagus and zucchini into 2 inch pieces and add to another saute pan. Mix in 1 tablespoon coconut oil and saute for 8 minutes over medium heat with sea salt and pepper to taste. Cook salmon covered over medium heat for 8 minutes with salt and garlic.
