Naturopathic Doctor Dishes | Salmon Frittata Ingredients
- 8 large eggs
- 1/2 half cup coconut milk
- 2 tablespoons sliced chives
- 1/2 teaspoon black pepper
- 2 tablespoons coconut oil
- 1 yellow onion, chopped
- 2 garlic cloves
- 1 bunch asparagus, cut into 1 inch pieces
- 4 ounces salmon (preferably wild Alaskan)
Heat oven to 350 F
Mix eggs, coconut milk, chives and pepper in a bowl. In a skillet pan, heat up coconut oil over medium heat and then add onions for 2-3 minutes. Stir in the garlic and cook for another 1 minute. Add in the asparagus pieces and cook for another 3 minutes. Next, stir in the salmon and add the egg mix from the bowl.
